About The Blend

Gazebo is a small-batch decaf blend built around two things that rarely coexist in a decaf: traceability and actual flavor. The blend combines carbonic maceration and natural processed coffees from Gold Mountain Coffee Growers' farming network in Valle del Cauca, Colombia, a UNESCO World Heritage region nestled between the National Park of Tatama and the Serrania de los Paraguas at elevations between 1,700 and 2,100 meters. The varieties and processing methods were chosen specifically to pull out dramatic fruit and sweetness without any of the funky notes that can make experimental decafs polarizing.

Decaffeination is handled through a sugarcane ethyl acetate process, where a naturally derived solvent opens the bean's pores and binds to caffeine without stripping the flavor compounds along with it. Up to 97% of the caffeine is removed while the cup character stays intact. Every batch can be traced back to the fermentation times, cherry sugar content, the specific farmer, and even the weather on the day of picking. Gazebo is what decaf looks like when no corners get cut.
