About The Producers
Guava Banana is a natural anaerobic microlot from El Vergel Estate in Fresno, Tolima, Colombia, grown and processed by siblings Elías and Shady Bayter. The Red and Yellow Caturra cherries are hand-selected at peak ripeness, then fermented anaerobically for 48 to 60 hours before a careful, multi-stage drying process that moves from raised sun beds to mechanical circular dryers, finishing with a 45-day stabilization in GrainPro bags. The result is exactly what the name implies: a deeply fruity, intensely layered cup with notes of chocolate, plum, guava, red fruits, and tangerine.
Forest Coffee, the company behind the project, was co-founded by Martha, Shady, and Elías Bayter after years of navigating the challenges of the local Colombian market. What began as a single estate has grown into a network of 250 farming families across four regional projects, built around direct relationships between producers and roasters. Guava Banana sits at the heart of that mission, grown in a microlot surrounded by guava trees, scoring in the 85 to 87.5 range, and available in small quantities for filter and high-end espresso programs.
